Pound Cake


3 cups + 3⁄4 cups all-purpose flour
9 whole eggs
1 cup + 2 Tbsp Elixir Stevia Baking Blend
4 sticks butter, unsalted, softened
1⁄2 tsp vanilla extract

Assemble all ingredients.
Let butter and eggs warm to room temperature.
Spray 2 bread pans (8 x 4 x 3) generously with non-stick cooking spray and then set aside.
Beat butter in a bowl on medium for 1 minute until fluffy. Slowly add Elixir Stevia Baking Blend and beat for another 6 minutes.
Whisk eggs and flour together in a small bowl.
Add the eggs and flour mixture to the Stevia Baking Blend and butter in three portions, mixing between additions.
Scrape down sides, add vanilla extract and mix.
Pour the batter into the 2 bread pans and smooth the surface with a spatula or back of a spoon.
Place the pans in a cold oven and set the temperature to 275°F. Bake for 30 minutes, rotate pans, and increase temperature to 350°F. Bake an additional 30 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and cool on wire rack for 15 minutes. Remove from pans and finish cooling.
